The effect of nitrate intake on the formation of salivary nitrite has been studied in a series of
individuals using celery juice as the source of nitrate. It was found that under certain
conditions salivary nitrite may reach concentrations of hundreds of mg/litre. The extent of
nitrite formation is related to the quantity of nitrate, to the concentration of the nitrate source
and to the oral microflora. These results may have a major influence on thinking concerning
the health effects of nitrate in the environment.
